Sweet Potato Pumpkin Yogurt Bowl
This bowl is perfect for breakfast and lunch of all the pumpkin lovers out there! Also a very quick way to use up leftover sweet potatoes.
Ingredients

1/2 medium sweet potato, diced

1 cup Greek yogurt (plain)

1/3 cup pumpkin puree

Dash of cinnamon

Toppings:
-
Nut butter of choice
-
Granola
-
Fruit of choice

Directions
-
Place diced sweet potato in the microwave for 3:30-3:45 minutes. Potatoes should be easily pierced with fork when done.

While cooking the potatoes, mix the yogurt, pumpkin, and cinnamon together.

Add on desired toppings and cooked sweet potato.
