Roasted Beet Wedges

Roasting is yet another way to enjoy these colorful vegetables.

Serves 4 

Ingredients

  • 1 pound beets, fresh and peeled

  • 1/2 teaspoon kosher salt

  • 3-5 rosemary sprigs

  • 4 teaspoons olive oil

Directions

1. Preheat oven to 400 degrees F

2. Cut beets into 6 wedges and place in bowl. Oil and season beets and coat.

3. Lay a baking pan with oven safe foil. Arrange beets on foil topped with rosemary. Wrap foil around beets tightly.

4. Bake for 1 hour, or until tender. When opening foil, do so slowly to allow stem to escape. Remove rosemary.
