Roasted Radishes

It's CSA season and using all the incredible produce you're getting every week can be a challenge. Since roasting radishes turns them from something sharp and spicy, to something like a mildly sweet potato, roasting is a great way to eat that big bunch of radishes.

Serves 4 as a side

Ingredients

  • 2lbs radishes

  • 1 1/2 TBSP olive oil

  • 1/2 TSP salt

  • 1/4 TSP pepper

  • 1/4 TSP garlic powder

  • 1 TBSP fresh parsley, chopped for garnish

Directions

  1. Preheat oven to 400 degrees F.​

  2. Trim the stems and long roots from the radishes and rinse well.

  3. Cut the radishes in half and place on a baking sheet.

  4. Drizzle with olive oil, then add salt, pepper, and garlic powder. Toss well with your hands until every radishes is well coated in oil and spices.

  5. Roast for about 40 minutes, or until the radishes and tender and golden brown.

  6. Sprinkle with fresh parsley and serve hot.
